From the moment you arrive, you are fed and entertained with homegrown Texas hospitality and fun!

WE CATER FOR PRIVATE GROUPS OF 50 TO 5,000

Of course, Texas barbecue is our specialty and the most popular item we have to offer.

Our brisket is smoked for many hours in a Texas-sized barbecue pit (which, by the way is the largest barbecue pit this side of the Rio Grande, as far as we know!) Our barbecue chicken melts in your mouth as it falls off the bone and our sausage with special barbecue sauce will make you feel like you have taken a delectable trip through barbecue heaven.

We can cater to any theme party you desire, whether it be a Mexican South of the Border Party, Tex-Mex Party, Hawaiian Luau, Cajun Catfish Fry, or any regional or traditional holiday theme party. Our catering staff has years of experience in the restaurant and hospitality industry and knows what it takes to cater for private groups of 50 to 5,000.

APPETIZERS

Chicken Caliente, Assorted Quesadillas (Smoked Chicken & Cheese, Artichoke, Mushroom, Spinach & Cheese, Picante & Cheese), Traildriver’s Chili, Assorted Chips and Dips, Tostada Chips, Queso Dip, and Ranch Salsa, Coins of Smoked Sausage in Special Sauce, Sautillos (sausage wrapped in flour tortillas), Popcorn, Peanuts or Chex Mix.

PARTY TRAYS

Assorted Finger Sandwiches (Ham, Turkey, Tuna Salad, Chicken Salad and Pimento Cheese), Assorted Cubed Cheeses and Crackers, Fresh Fruit with Dips, and Fresh Vegetables with Dips.

SALAD BAR

Mixed greens, tomatoes, mushrooms, baby carrots, cucumber rings, bell peppers, croutons, grated cheddar cheese and assorted home-style salad dressings.

THE WESTERN ROUND-UP

Your choice of two meats—slow smoked beef brisket, sausage, smoked chicken quarters, or beef/pork ribs served with  tangy potato salad, crisp coleslaw, ranch beans with onions and special sauce, all the condiments, barbecue sauce and freshly baked Ranch rolls.

THE CONQUISTADOR

Beef and chicken fajitas marinated in our special sauce served with refried beans OR borracho beans, Mexican rice, grated cheese, shredded lettuce, pico de gallo, guacamole, sour cream, jalapenos and flour tortillas.

FRESHWATER CATFISH FRY

Deep-fried catfish fillets served with cowboy potatoes, crisp coleslaw and hushpuppies, condiments, tartar sauce and ketchup. It’s yummy!

TRAILDRIVER COOK-OUT

Grilled 8 oz. Rib Eye Filet served with cowboy potatoes,country style green beans with onions and herbs, tossed salad and freshly baked Ranch rolls.

*Option: We can provide a combination of a 6 oz. Ribeye and a 4 oz. Boneless Breast of Chicken as an entrée. Also, we can have a brand custom made with the company’s logo to brand the steaks.

HITCHIN’ POST PICNIC

Grilled hamburgers and hot dogs served with tangy potato salad, ranch beans with onions and special sauce, lettuce,tomatoes, pickles, grated cheese, chips, buns and condiments.

THE BUNKHOUSE

Boneless Breast of Chicken marinated and charbroiled over coals OR Chicken Fried Steak with country gravy served with mashed potatoes OR cowboy potatoes, corn cobbets, country style green beans with onions and herbs, tossed salad and freshly baked Ranch rolls.

DESSERTS

Assorted Country Cobblers (Blackberry, Peach, and Apple), Apple Pecan Tacos, Texas Pecan Pie, Bunuelos, Churros, Fudge Nut Brownies, Assorted Cookies (Chocolate Chip, Peanut Butter, and Sugar), and can’t forget Vanilla Ice Cream!

Cattle Baron’s Banquet

In memory of the Great American cattle drives, our cooks can do the same for you—a banquet for your cattle barons!

FOR STARTERS

We offer Vaquero Wrap-Arounds (quesadillas served with a combination of cheeses, salsa, sautéed onions and mushrooms wrapped in a flour tortilla and grilled over coals).

Campfire Chili with sides of grated cheese, diced jalapenos, and cornbread muffins; and tubs of crisp salad greens topped with Ranch dressing.

MAIN COURSE

Generous cuts of aged T-Bone steaks served with cowboy potatoes with herbs and onions, spicy creamed corn and freshly baked Ranch rolls.

DESSERT

We have cinnamon bread pudding with whiskey sauce, apple pandowdy and Dutch oven blackberry cobbler.
